If you think vegan food is not filling try one of these! 😁🐳 First of all, unlike many other raw cookie dough recipes, this one is not full of fatty butters (although it does have some healthy-fats!) so it can help you stay nice and lean 👌. Instead it has oats which are high in protein and iron, cacao (also rich in iron), and dates as a natural sweetener. Plus superfood pumpkin seeds full of zinc and magnesium. Love this dough because only one piece keeps you super-full in between meals which is amazing 💪🦍

Ingredients
  • 6 tablespoons oats
  • 2 tablespoons raw cacao
  • 7 dates
  • 2 tablespoons pumpkin seeds
  • 1 teaspoon ground cinnamon
  • 7 tablespoons dairy-free milk we used soy milk
Instructions
  1. Add all ingredients to a food processor and blend for about 30-60 seconds.

  2. Scrape and take all the dough out, then work it with your hands to make one nice big chunk.

  3. Put the dough on a flat surface and flatten it: make a large square as thick as you want your bites to be. Even the top with another flat surface or a rolling pin.

  4. Cut in chunks - ready!

Recipe Notes

☆ DOUGH: it should be semi-sticky, eg. it should stick together but not too much to your hands. If not, one tablespoon at a time, add more oats if too liquid or more milk if too dry. Keep in mind that the dough will dry up a little more with time as the oats will absorb more liquid, so if you think you will eat them at a later stage make them slightly stickier rather than dry.
