Is vegan cheese the best thing ever when you switch to a plant-based diet?! You can make it in no time and give it the flavours you want. Add Italian herbs, spread it on anything you like. Yes ok, there are cashews in there which are high in fats BUT do you know how much fat there is in cheese? And that is bad fat. Cashews are real, whole, plant based ingredients with loads of nutrients and good fats instead. So if you have to dig in into anything cheesy, make it a vegan soft cheese 💚🖖

Ingredients
Step 1
  • 1/2 cup cashew nuts
  • 8 leaves fresh basil
  • 1 or 2 teaspoons fresh thyme
  • 1 clove garlic
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons nutritional yeast
Optional
  • extra virgin olive oil
  • water
Instructions
Step 1
  1. Put all ingredients from step one (cashews, herbs, garlic, apple cider vinegar and nutritional yeast) in the food processor and blend until you get a soft paste. If too dry add water, 1 tablespoon at a time, and blend until you reach the desired consistency. 

Optional
  1. You could also add olive oil to give it a little extra Italian touch, but keep in mind cashews are already high in fats.

Making the cheese form
  1. Scrape the cheese out with a spatula and put it in a round mould, pressing it down with your spatula to even out the top.

  2. Ready to spread on bread or crackers, or put in the fridge to chill.

Recipe Notes

Cashews: you don't need to soak them overnight (but you can!). Unless you have a poorly performing food processor they typically blend just fine even with low-end versions.
