15 Min Mexican Beans Jacket Potatoes [Vegan + High-Protein + Healthy Fats]

This recipe is great for lunch or a quick dinner. You need a microwave (or you can do without it but it will take longer to prep) and simple earthy ingredients: potatoes, beans, vegetables and herbs. 🌽🌶 Add avocado for extra healthy fats or eat as is. 🥑 🦍

Ingredients
  • 2 sweet potatoes
  • 2 spoons sweetcorn
  • 1/2 can red beans
  • 1 small bunch fresh coriander
  • 1 avocado (optional)
  • 1 clove garlic
  • 1 lime
  • olive oil
  • salt
  • black pepper
  • red chillies (as much as you can bear!)
Instructions
  1. Cook the sweet potatoes in the microwave - check the label, ours took 7 min.

  2. Meanwhile mix all other ingredients, herbs and spices (except the avocado) in a mixing bowl.

  3. Open the top of the cooked potatoes and fill with the mixed ingredients. 

  4. Slice the avocado and put on the side. Done!
