Super delicious vegan overnight oats recipe for a quick and healthy vegan breakfast or snack. Simply make layers of oats, dairy-free yogurt, peanut butter and mixed berries. 🥜 Top with a chunk of dark chocolate, leave in the fridge overnight and it'll be ready to eat in the morning.
- 1 chunk dark chocolate
- 3 tablespoons dairy-free yogurt
- 1-2 tablespoons peanut butter
- chia seeds
- dairy-free milk
- mixed berries (blueberries, pomegranate, raspberries, etc.)
Cover in milk, more or less to the same level of the oats.
Add a thin layer of peanut butter.
Add a thick layer of yogurt.
Top with mixed berries, chia seeds and dark chocolate chunks. Ready for the fridge! Leave overnight and eat in the morning.
☆ MILK: use more milk if you like your oats soft, use less if you prefer them thick. Different brands of milk give you different results, so experiment with the one(s) you use.NUT
☆ NUT BUTTERS: nut butters are high in fats. They are good fats, however you should adjust the quantity according to your needs and diet.
☆ YOGURT: we used soy yogurt which is naturally high in protein and low in fats. Check the label of your yogurt if you need to adjust the quantity depending on its nutritional value. Coconut yogurts are naturally high in saturated fats and we tend to avoid them.
☆ BERRIES: you can use frozen or fresh berries, either will be ready to eat in the morning.
☆ Take it with you! If you don't want/have time to eat your breakfast at home just make your overnight oats directly into a leakproof food pot and take it with you in the morning 🙌🦍
